I have created a custom pressure sensor curve for one customer (who was really bugged by the -2 psi when the engine was off) but normally I think these age-related errors are just the inaccuracy of VDO-style sensors. You might try swapping one with a buddy to see if the sensor is the source of the issue or you have something else going on (for example a reference voltage that's not quite right, say caused by a chaffed wire in the harness).

It may be a reference voltage issue as both your temp and pressure would be sensitive to that. Try unplugging one channel at a time to see if the value change when one particular channel is unplugged.
